"timeless" is composed
of eleven Hennessy eaux-de-vie, which were all ranked exceptional from the
day they entered the Hennessy cellars — which house the largest reserves
of old cognacs in the world. These eaux-de-vie were tested each year by
the Hennessy cellar master. As part of the Hennessy " Grandes Réserves
" or " Ancien Stock ", the eaux-de-vie were aged separately
and only in older barrels which had lost most of their tannin.
The
transparent crystal, natural shape and roundness of the decanter contrast
sharply with the rough, angular man-made shape of the brushed metal
casing.

In the 1960s, Mark Edwin Andrews bought the remaining casks of pure pot
still whiskey distilled in 1951 at the prestigious B. Daly Distillery in
Tullamore, Co. Offaly. The casks were periodically tested until it was
felt that they had reached the peak of maturity. In 1987, the casks were
bottled. Andrews named his whiskey after the castle he owned in the west
of Ireland. Knappogue Castle 1951, aged for 36 years in sherry casks, is
the oldest and rarest Irish whiskey in the world.
